Orange Teriyaki Rice Noodle Saute

My daughters have been really into Asian food lately so I figured I'd try something that was inspired by the East that doesn't come in a take-out container.  However, as a busy mom, I realize that not every single thing can come from scratch, it's just not possible.  If I had that kind of time....well, let's just say I don't have that kind of time.  So what's the middle ground? 

Borrowing my good "friend" Sandra Lee's "Semi-Homemade" concept, I used store bought Teriyaki sauce/marinade and added fresh ingredients to make this dish entirely my own.  You'll notice that the recipe is ripe with substitutions.  That's just because you can really use whatever meat/tofu or veggies you might have on hand. It's a great meal to throw together when you've forgotten to plan dinner....but who does that, right? 

Orange Teriyaki Rice Noodle Saute
Ingredients
1 package rice noodles (substitute Angel Hair pasta)
1 lb. Chicken breast (Substitute any protein: Chicken breast/thighs, pork, beef strips, tofu cubes)
1 bottle Teriyaki marinade and sauce
1 orange
1 tsp red pepper flakes
1/2 cup brown sugar
1 tbsp cooking oil
3 cups broccoli florets
2 cups carrots sliced or julienned
1 cup sliced mushrooms (optional)
1 cup shredded cabbage (optional)

Directions:
1. Make the sauce: A) Empty half the bottle of Teriyaki into a saucepan, stir in the brown sugar and red pepper flakes.  B) Slice thick wedges of rind off the orange, cut into strips and add to the sauce. C) Cut the remaining orange in half and squeeze one half into the saucepan.  D) Heat until all ingredients combine and sugar is melted. Do not bring it to a boil. 
2. Chop your meat into bit sized chunks or slices.  Using about half the sauce, marinate your protein for at least 30 minutes in the refrigerator.
3. In the meantime, chop your veggies so they're ready when you are.  No shame in using frozen vegetables, just be sure to adjust your cook time accordingly. Also, prepare your noodles according to package directions.  You'll want all of your ingredients handy.
4. Heat up a large saute pan with the cooking oil. Add your meat with its marinade to the pan and cook until done.
5. Remove the meat and set aside, leaving behind any sauce.  Add your veggies to the hot pan and cook to your preferred doneness. 
6.  Add the remaining sauce and stir in the cooked meat until all is combined and heated through. 
7.  Toss your noodles with the meat/veggie/sauce mixture until all is thoroughly combined.

Serve:
This meal serves 4-6

Serve in large shallow bowls if possible and toss some chop sticks on the table for fun.
